Noreen's Kitchen

15 ounces (3 cups) chocolate of your choice

Chips, bars or chunks

1 tablespoon coconut oil

3 cups crispy rice cereal

8 ounces pistachio bark with almonds OR

8 ounces of green chocolate coating with 1 teaspoon pistachio or almond extract added


Step By Step Instructions

Melt milk, dark or white chocolate with 1 tablespoon coconut oil in microwave in 30 second bursts, stirring after each time until chocolate is smooth and no lumps are evident.

Add crispy rice cereal to the melted chocolate and stir until everything is well coated and blended.

Pour chocolate, cereal mixture onto a non greased, clean and very dry baking sheet and spread evenly to a thickness of approximately 1/8 inch.

Melt pistachio bark with 1 tablespoon of coconut oil in the microwave on 30 second bursts stirring after each time until smooth.

The pistachio bark I used from Nuts.com had whole roasted almonds in it.  I removed the almonds from the melted chocolate with a fork and placed them on a piece of parchment paper while I made the rest of the bark. 

Place the almonds, if desired on top of the spread out chocolate and cereal mixture.

Place the remaining melted pistachio chocolate in a zip top bag or pastry bag and push it all the way into one of the bottom corners.  Snip a very small amount of the corner off with scissors.

Evenly drizzle the melted pistachio chocolate over the bark until you are pleased with the appearance.

Refrigerate the bark for at least 20 minutes before removing with a thin metal spatula and breaking into pieces of desired size.

Alternatively you can use a light green candy coating wafer melted with a teaspoon of ether almond or pistachio extract stirred in.  Only use real extract and not flavor.  Flavor is made with water which will cause the chocolate coating to seize.  Extract is made with alcohol which will be fine.  

CHRISTMAS CRUNCH BARK

1 Cup good quality mayonnaise
1 tablespoon granulated sugar
2 tablespoons apple cider vinegar
1/2 teaspoon celery seed
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon salt

1/2 teaspoon cracked black pepper
