Ingredients
Serves 4
Adjust to serve as many as you like
1 large sweet potato peeled and sliced in 1/4 inch slices 2 Granny Smith apples cored and sliced in 1/4 inch slices 1/2 cup pure maple syrup | 2 tablespoons brown sugar 1/2 teaspoon salt 1/2 teaspoon cracked black pepper 1 tablespoon olive oil |
Step by Step Instructions
Preheat oven to 350 degrees
Shingle apple and sweet potato slices alternately in an appropriate sized baking dish that has been prepared with cooking oil spray.
Drizzle maple syrup over everything.
Sprinkle brown sugar, salt and pepper on top of the syrup.
Drizzle olive oil over all of the ingredients.
Bake for 30 minutes or until browned, bubbly and the sweet potato and apples are soft and caramelized.
This is a perfect side dish to go with a salty baked ham or a savory roast turkey or chicken. Heck, I might even go as far as to say that you could serve this as a dessert with a scoop of vanilla ice cream. Go ahead! I won't tell!
